The Story

What’s In a Leaf

Bai Hao Yin Zhen — ‘White Hair Silver Needle’ — is among the most celebrated of Chinese white teas, plucked as unopened buds only and barely processed: withered and dried, and little else. The cup is about as close to the living leaf as tea ever gets.

It asks for patience. Quiet and slow to reveal itself, Silver Needle gives a pale, silky cup with soft notes of melon, hay and honeysuckle — a tea for an unhurried, considered moment rather than a quick lift.

Water80–85°C — gentle heatWater off the boil would flatten the delicate buds.
LeafA generous 2–3 tsp per cup — the buds are light and fluffyWhite tea is airy; use more leaf than you would expect.
Time3–5 minutes, unhurriedSlow to open — give it time, and re-steep 2–3 gentle rounds.

Drink it plain — no milk, no sugar. Loveliest in a glass, where the silver buds hover and slowly sink.
