The Story

What’s In a Leaf

Across Morocco and the Maghreb, mint tea is the taste of welcome — prepared with ceremony, poured from a height to crown each glass with foam, and offered generously to every guest.

It is built on Chinese gunpowder green — small rolled pellets that open in the pot — lifted by fresh North African spearmint and served sweet. A small emblem of the world’s tea cultures meeting in a single glass.

The Ritual

How to Brew

Less a recipe than a ritual — brew the green strong, bring in plenty of mint, sweeten, and pour from a height.

Water90–95°C — just off the boilGunpowder green can take real heat.
Tea & mint1½ tsp green + a handful of fresh spearmintBrew the base strong; the mint and sugar balance it.
Time3–4 minutes, then sweetenTraditionally served in three rounds, each a little different.

Serve hot and sweet in small glasses — the pour from a height is what crowns each with foam. Just as good chilled over ice when it is warm.
