The Story

What’s In a Leaf

Earl Grey is defined by bergamot, not by geography — the tradition of scenting black tea with the oil of a Mediterranean citrus, which became one of the most recognizable cups in the world.

On its base sits a bright Ceylon black tea that carries the bergamot cleanly, finishing light and fragrant. Familiar and refined, it is the tea that bridges the everyday and the occasion — and one of the easiest to give.

The Ritual

How to Brew

Earl Grey rewards a gentle hand — just under a boil, not too long, and let the bergamot lead.

Water90–95°C — just off the boilBergamot turns sharp if the water scorches it.
Leaf1 heaped tsp (2–3 g) per cup (240 ml)A level scoop keeps the citrus bright, not bitter.
Time3 minutes — no longerJudge it by aroma; over-steeping is what pushes the bergamot sharp.

Lovely plain. A twist of lemon lifts it; a splash of milk rounds it — but skip the sugar and let the bergamot lead.
